Ingredients:

  • For the Rice Layer:
    • 2 cups cooked white rice
    • 1/2 cup grated Parmesan cheese
    • 2 eggs
    • 1/4 cup milk
    • Salt and pepper to taste
  • For the Meat Sauce Layer:
    • 2 tablespoons olive oil
    • 1 onion, finely chopped
    • 2 garlic cloves, minced
    • 1 lb (450g) ground beef
    • 1 can (14 oz) diced tomatoes
    • 2 tablespoons tomato paste
    • 1 teaspoon paprika
    • 1 teaspoon dried oregano
    • Salt and pepper to taste
  • For the Topping:
    • 2 cups shredded mozzarella cheese

Instructions:

  1. Prepare the Rice Layer:
    • In a bowl, mix the cooked rice, Parmesan cheese, eggs, milk, salt, and pepper until combined. Set aside.
  2. Make the Meat Sauce:
    • Heat olive oil in a skillet over medium heat. Sauté the onions until soft.
    • Add the garlic and cook for 1 minute.
    • Add the ground beef, breaking it up with a spoon, and cook until browned.
    • Stir in the diced tomatoes, tomato paste, paprika, oregano, salt, and pepper. Simmer for 10-15 minutes until the sauce thickens.
  3. Assemble the Casserole:
    • Preheat your oven to 375°F (190°C).
    • In a greased baking dish, spread half of the rice mixture as the bottom layer.
    • Add a layer of the meat sauce.
    • Repeat with the remaining rice and meat sauce.
  4. Add the Cheese:
    • Sprinkle the mozzarella cheese evenly over the top.
  5. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.
  6. Serve:
    • Let it cool for a few minutes before slicing. Serve warm and enjoy!
