Ingredients
For the Cream Layer:
- 4 egg yolks
- 1/2 cup (100g) granulated sugar
- 1 cup (225g) mascarpone cheese, softened
- 1 cup (240ml) heavy cream (chilled)
For the Layers:
- 2 cups (480ml) strong brewed coffee or espresso, cooled
- 2 tbsp coffee liqueur (optional)
- 24 ladyfinger cookies (savoiardi)
Instructions
- Prepare the Cream:
- In a medium bowl, whisk the egg yolks and sugar until pale and creamy. Use a hand mixer for best results.
- Add the mascarpone cheese and mix until smooth.
- Whip the Cream:
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the mascarpone mixture, being careful not to deflate the cream.
- Prepare the Coffee Dip:
- Combine the cooled coffee and liqueur in a shallow dish.
- Assemble the Tiramisu:
- Quickly dip each ladyfinger into the coffee mixture (don’t soak them for too long).
- Arrange a layer of dipped ladyfingers in the bottom of your dish.
- Spread half of the cream mixture over the ladyfingers.
- Repeat with another layer of coffee-dipped ladyfingers and top with the remaining cream mixture.
- Chill and Decorate:
- Cover and refrigerate for at least 4 hours or overnight for the flavors to develop.
- Before serving, dust the top with cocoa powder or sprinkle with grated chocolate.
