Ingredients
For the Ice Cream Filling:
- 2 cups (500ml) heavy cream
- 1 cup (250ml) sweetened condensed milk
- 1/2 cup (50g) cocoa powder (optional, for chocolate flavor)
For the Chocolate Coating:
- 2 cups (350g) dark or milk chocolate chips
- 2 tablespoons (30ml) coconut oil or vegetable oil
- Optional: 1/2 cup (50g) crushed nuts or crisped rice for texture
Instructions
- Prepare the Ice Cream Filling:
- In a mixing bowl, whip the heavy cream until stiff peaks form.
- Fold in the sweetened condensed milk and cocoa powder (if making chocolate ice cream) until well combined.
- Pour the mixture into a rectangular dish lined with parchment paper and freeze for at least 4 hours or until solid.
- Shape the Bars:
- Once the ice cream is frozen, remove it from the dish and cut it into rectangular bars.
- Place the bars back into the freezer while you prepare the chocolate coating.
- Make the Chocolate Coating:
- Melt the chocolate chips and coconut oil in a microwave or double boiler until smooth. Stir in crushed nuts or crisped rice if desired.
- Coat the Bars:
- Using a fork or skewer, dip each frozen bar into the melted chocolate, ensuring it’s fully coated.
- Place the coated bars on a tray lined with parchment paper and freeze for another 30 minutes to set.
