Ingredients:

  • 1 cup glutinous rice flour (also called mochiko)
  • 1/4 cup sugar
  • 3/4 cup water
  • Cornstarch or potato starch (for dusting)

Optional:

  • Sweet fillings (e.g., red bean paste, chocolate, or fruit).

Instructions:

  1. Mix the Ingredients:
    • In a microwave-safe bowl, combine the glutinous rice flour and sugar.
    • Gradually add the water while stirring until smooth and lump-free.
  2. Cook the Mochi:
    • Microwave Method: Cover the bowl with plastic wrap (leave a small vent for steam). Microwave on high for 1 minute, then stir. Repeat this process in 30-second intervals until the mixture becomes thick, glossy, and slightly translucent (about 2–3 minutes total).
    • Steaming Method: Place the bowl in a steamer and steam for 15–20 minutes, stirring halfway through.
  3. Cool and Dust:
    • Lightly dust your work surface and hands with cornstarch.
    • Transfer the hot mochi onto the dusted surface. Let it cool slightly, but not completely, to make handling easier.
  4. Shape the Mochi:
    • Roll the mochi into a log and divide it into small, equal pieces.
    • Flatten each piece and fill with your desired filling, if using. Pinch the edges together to seal, then roll into a smooth ball or square.
  5. Serve:
    • Serve the mochi immediately, or store them in an airtight container at room temperature for up to a day. Mochi is best enjoyed fresh.
