Ingredients:
- 1 cup (200g) of rice (short-grain works best)
- 4 cups (1 liter) of milk
- 1 cup (200g) of sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 1 cinnamon stick (optional for cooking)
- Ground cinnamon (for garnish)
- 1 tablespoon butter (optional, for creaminess)
- Pinch of salt
Instructions:
- Prepare the Rice:
- Rinse the rice under cold water to remove excess starch.
- In a medium-sized pot, add the rice and 2 cups of water.
- Bring to a boil, then reduce the heat to low and let the rice simmer until the water is mostly absorbed (about 10 minutes).
- Cook the Pudding:
- Add the milk, cinnamon stick (if using), and a pinch of salt to the pot with the rice.
- Simmer on low heat, stirring occasionally, for about 20-25 minutes, until the rice becomes soft and creamy.
- Sweeten and Flavor:
- Stir in the sugar and vanilla extract. Mix well and let it cook for another 5 minutes.
- For extra creaminess, stir in a tablespoon of butter at this stage (optional).
- Cool and Serve:
- Remove from heat and discard the cinnamon stick.
- Pour the pudding into serving bowls or glasses.
- Let it cool to room temperature, then refrigerate for 1-2 hours if you prefer it chilled.
- Garnish:
- Sprinkle ground cinnamon on top before serving.
