Ingredients:

  • 4-5 bananas (ripe, peeled, and halved lengthwise)
  • 300g biscuits (such as digestive or tea biscuits)
  • 1 can (395g) sweetened condensed milk
  • 200ml heavy cream (chilled)
  • 1 packet (10g) unflavored gelatin (or agar-agar for a vegetarian option)
  • 1/4 cup milk (warm, for dissolving the gelatin)
  • 1/2 tsp vanilla extract (optional)
  • 50g biscuit crumbs (for topping)

Instructions:

  1. Prepare the Base:
    • Arrange a layer of biscuits at the bottom of a rectangular baking dish.
    • Place halved bananas over the biscuits.
  2. Make the Cream Mixture:
    • In a small bowl, dissolve the gelatin in warm milk and set aside for 5 minutes to bloom.
    • In a mixing bowl, combine sweetened condensed milk, heavy cream, and vanilla extract. Whisk until smooth.
    • Microwave the gelatin mixture for 10 seconds (or until fully dissolved) and mix it into the cream mixture.
  3. Assemble the Dessert:
    • Pour the cream mixture evenly over the bananas and biscuits in the dish.
  4. Add the Topping:
    • Crush some biscuits into fine crumbs and sprinkle them evenly over the top of the cream layer.
  5. Chill:
    • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until the dessert is fully set.
  6. Serve:
    • Slice into squares and serve chilled. Enjoy your creamy, banana-biscuit delight!
