Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp garlic powder (optional)
- 1/2 cup cooked bacon bits (optional)
- 1 1/2 cups shredded cheese (cheddar, mozzarella, or a mix)
- 1/4 cup chopped fresh herbs (parsley, chives, or spring onion)
- 2 large eggs
- 1 cup milk
- 1/3 cup vegetable oil (or melted butter)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
- Mix the Dry Ingredients:
- In a large bowl, whisk together the flour, baking powder, salt, pepper, and garlic powder.
- Add the Mix-Ins:
- Stir in the shredded cheese, bacon bits, and chopped herbs, reserving a small amount of each for topping.
- Prepare the Wet Ingredients:
- In a separate bowl, beat the eggs, milk, and oil (or melted butter) until well combined.
- Combine:
- Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix).
- Fill the Muffin Cups:
- Divide the batter evenly among the muffin cups, filling them about 3/4 full. Sprinkle the reserved cheese, bacon, and herbs on top.
- Bake:
- Bake for 18-22 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Let the muffins cool slightly in the pan before transferring them to a wire rack. Serve warm or at room temperature.
