Ingredients:
For the crust:
1 1/2 cups (190g) all-purpose flour
1/2 cup (115g) cold unsalted butter, cubed
1/4 cup (50g) sugar
1 egg yolk
2-3 tablespoons cold water
For the custard filling:
2 cups (500ml) milk
3 egg yolks
1/3 cup (65g) sugar
3 tablespoons (30g) cornstarch
1 teaspoon vanilla extract
For the topping:
2-3 apples (thinly sliced)
2 tablespoons sugar
1 tablespoon butter (melted)
A pinch of cinnamon (optional)
Instructions:
- Make the crust:
- In a bowl, mix flour and sugar. Add the cold butter and rub it into the flour until it resembles breadcrumbs.
- Add the egg yolk and cold water (a little at a time) until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
- Roll out the dough and line a tart pan. Prick the base with a fork and bake at 375°F (190°C) for 10 minutes. Set aside.
- Prepare the custard:
- Heat the milk in a saucepan until it’s warm (not boiling).
- In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
- Slowly pour the warm milk into the egg mixture while whisking. Return the mixture to the saucepan.
- Cook over medium heat, stirring constantly, until thickened. Remove from heat and add vanilla extract. Let it cool slightly.
- Assemble the tart:
- Pour the custard into the pre-baked tart shell.
- Arrange the apple slices on top in a spiral or layered pattern.
- Brush the apples with melted butter, sprinkle sugar, and cinnamon.
- Bake:
Bake the tart at 375°F (190°C) for 25-30 minutes, or until the apples are golden and caramelized.
- Serve:
Let the tart cool before slicing. Dust with powdered sugar if desired.
