Ingredients:

For the crust:

1 1/2 cups (190g) all-purpose flour

1/2 cup (115g) cold unsalted butter, cubed

1/4 cup (50g) sugar

1 egg yolk

2-3 tablespoons cold water

For the custard filling:

2 cups (500ml) milk

3 egg yolks

1/3 cup (65g) sugar

3 tablespoons (30g) cornstarch

1 teaspoon vanilla extract

For the topping:

2-3 apples (thinly sliced)

2 tablespoons sugar

1 tablespoon butter (melted)

A pinch of cinnamon (optional)


Instructions:

  1. Make the crust:
  2. In a bowl, mix flour and sugar. Add the cold butter and rub it into the flour until it resembles breadcrumbs.
  3. Add the egg yolk and cold water (a little at a time) until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
  4. Roll out the dough and line a tart pan. Prick the base with a fork and bake at 375°F (190°C) for 10 minutes. Set aside.
  5. Prepare the custard:
  6. Heat the milk in a saucepan until it’s warm (not boiling).
  7. In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
  8. Slowly pour the warm milk into the egg mixture while whisking. Return the mixture to the saucepan.
  9. Cook over medium heat, stirring constantly, until thickened. Remove from heat and add vanilla extract. Let it cool slightly.
  10. Assemble the tart:
  11. Pour the custard into the pre-baked tart shell.
  12. Arrange the apple slices on top in a spiral or layered pattern.
  13. Brush the apples with melted butter, sprinkle sugar, and cinnamon.
  14. Bake:

Bake the tart at 375°F (190°C) for 25-30 minutes, or until the apples are golden and caramelized.
