Ingredients
For the Sponge Cake:
- 3 large eggs
- ½ cup (100g) granulated sugar
- ½ cup (65g) all-purpose flour

- ¼ teaspoon vanilla extract
For the Berry Mousse:
- 1 cup (150g) mixed berries (e.g., raspberries, blueberries, strawberries)
- ⅓ cup (65g) granulated sugar
- 1 tablespoon lemon juice
- 2 teaspoons powdered gelatin (or 1 gelatin sheet)
- 1 cup (240ml) heavy whipping cream

- Optional: edible decorations (e.g., frosted fruits, chocolate leaves)
For the Glaze (Optional):
- ½ cup (120ml) berry juice (strained from blended berries)
- 1 teaspoon gelatin powder
Instructions
Step 1: Make the Sponge Cake
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch (23cm) round cake pan with parchment paper.
- In a bowl, beat the eggs and sugar together until the mixture is pale, thick, and tripled in volume (about 5–7 minutes).
- Sift the flour and baking powder into the egg mixture and gently fold it in. Add the vanilla extract and mix just until combined.
- Pour the batter into the prepared pan and bake for 12–15 minutes, or until the cake is golden and springs back when lightly pressed. Let it cool completely.
Step 2: Prepare the Berry Mousse
- Blend the berries, sugar, and lemon juice into a puree. Strain the mixture to remove seeds.
- Dissolve the gelatin in 2 tablespoons of warm water (or as per package instructions) and mix it into the berry puree.
- In a chilled bowl, whip the heavy cream to soft peaks. Fold the whipped cream into the berry puree until smooth.
Step 3: Assemble the Cake
- Place the sponge cake on a serving plate and secure it with a cake ring or springform pan.
- Pour the berry mousse over the sponge cake, smoothing the top with a spatula. Refrigerate for 4–6 hours, or until set.
Step 4: Add the Glaze and Decorations (Optional)
- For the glaze, heat the berry juice and dissolve the gelatin in it. Let it cool slightly before pouring it gently over the set mousse layer. Refrigerate until the glaze is firm.
- Decorate the top with fresh berries, frosted cherries, or other edible decorations.
Step 5: Serve and Enjoy
