Enjoy this easy and delicious recipe for crispy, golden-brown fritters! Perfect as a snack or appetizer.

Ingredients:

1 cup shredded cheese (cheddar or mozzarella)

1 cup cooked and crumbled potatoes (or grated zucchini, drained)

1/2 cup breadcrumbs

1/4 cup chopped fresh parsley or cilantro

2 eggs, lightly beaten

1/2 small onion, finely chopped

1 garlic clove, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika or chili flakes (optional)

Oil for frying

Instructions:

  1. Prepare the Mixture:

In a large bowl, combine the shredded cheese, potatoes (or zucchini), breadcrumbs, parsley, onion, garlic, salt, pepper, and paprika.

Add the beaten eggs and mix until it forms a sticky, moldable mixture. If it’s too wet, add more breadcrumbs.

  1. Shape the Fritters:

Take small portions of the mixture and shape them into patties (about 2 inches wide).

  1. Heat the Oil:

Heat a shallow layer of oil in a skillet over medium heat.

  1. Fry the Fritters:

Fry the patties in batches for about 2-3 minutes per side, or until golden brown and crispy.

Place the cooked fritters on a paper towel to drain excess oil.

  1. Serve:

Serve warm with a dipping sauce like sour cream, yogurt, or a spicy mayo.
