Ingredients:

For the Cream Mixture:

  • 4 large egg yolks
  • 1/2 cup (100g) granulated sugar
  • 1 cup (240ml) mascarpone cheese, room temperature
  • 1 cup (240ml) heavy cream, cold

For the Layers:

  • 1 1/2 cups (360ml) brewed espresso or strong coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 1 package (7oz/200g) ladyfinger biscuits (savoiardi)

For Garnish:

  • Unsweetened cocoa powder, for dusting
  • Fresh mint leaves (optional)

Instructions:

  1. Prepare the Cream Mixture:
    • In a heatproof bowl, whisk together the egg yolks and sugar.
    • Place the bowl over a pot of simmering water (double boiler method) and whisk constantly for 5-7 minutes, until the mixture thickens slightly and turns pale. Remove from heat and let cool.
    • Add the mascarpone cheese to the cooled egg mixture and whisk until smooth.
    • In a separate bowl, whip the heavy cream to stiff peaks and gently fold it into the mascarpone mixture. Set aside.
  2. Prepare the Coffee Mixture:
    • Mix the cooled espresso with the coffee liqueur (if using) in a shallow dish.
