Ingredients:
For the Cream Mixture:
- 4 large egg yolks
- 1/2 cup (100g) granulated sugar
- 1 cup (240ml) mascarpone cheese, room temperature
- 1 cup (240ml) heavy cream, cold
For the Layers:
- 1 1/2 cups (360ml) brewed espresso or strong coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 package (7oz/200g) ladyfinger biscuits (savoiardi)
For Garnish:
- Unsweetened cocoa powder, for dusting
- Fresh mint leaves (optional)
Instructions:
- Prepare the Cream Mixture:
- In a heatproof bowl, whisk together the egg yolks and sugar.
- Place the bowl over a pot of simmering water (double boiler method) and whisk constantly for 5-7 minutes, until the mixture thickens slightly and turns pale. Remove from heat and let cool.
- Add the mascarpone cheese to the cooled egg mixture and whisk until smooth.
- In a separate bowl, whip the heavy cream to stiff peaks and gently fold it into the mascarpone mixture. Set aside.
