Ingredients:

  • 1 cup (200g) of rice (short-grain works best)
  • 4 cups (1 liter) of milk
  • 1 cup (200g) of sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 cinnamon stick (optional for cooking)
  • Ground cinnamon (for garnish)
  • 1 tablespoon butter (optional, for creaminess)
  • Pinch of salt

Instructions:

  1. Prepare the Rice:
    • Rinse the rice under cold water to remove excess starch.
    • In a medium-sized pot, add the rice and 2 cups of water.
    • Bring to a boil, then reduce the heat to low and let the rice simmer until the water is mostly absorbed (about 10 minutes).
  2. Cook the Pudding:
    • Add the milk, cinnamon stick (if using), and a pinch of salt to the pot with the rice.
    • Simmer on low heat, stirring occasionally, for about 20-25 minutes, until the rice becomes soft and creamy.
  3. Sweeten and Flavor:
    • Stir in the sugar and vanilla extract. Mix well and let it cook for another 5 minutes.
    • For extra creaminess, stir in a tablespoon of butter at this stage (optional).
  4. Cool and Serve:
    • Remove from heat and discard the cinnamon stick.
    • Pour the pudding into serving bowls or glasses.
    • Let it cool to room temperature, then refrigerate for 1-2 hours if you prefer it chilled.
  5. Garnish:
    • Sprinkle ground cinnamon on top before serving.
