Ingredients:
2 cups (250g) all-purpose flour
1/2 cup (115g) unsalted butter, chilled and cubed
1/2 tsp salt
1/2 cup (120ml) cold milk or water
1 1/2 cups (150g) grated cheese (cheddar, mozzarella, or a mix)
1 egg, beaten (for egg wash)
Black sesame seeds or nigella seeds (optional, for topping)
Instructions:
- Make the Dough:
In a bowl, mix the flour and salt. Add the chilled butter and rub it into the flour until the mixture resembles breadcrumbs.
Slowly add the cold milk or water, mixing until the dough comes together. Do not overmix.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Prepare the Pastries:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll out the dough on a floured surface to about 1/4 inch (0.5 cm) thick.
Cut into rectangles or squares using a knife or cookie cutter.
- Add Cheese:
Place the squares on the prepared baking sheet. Sprinkle grated cheese generously on top of each square.
Brush the edges with beaten egg and sprinkle black sesame or nigella seeds on top, if desired.
- Bake:
Bake for 12-15 minutes or until the cheese is bubbly and the edges are golden brown.
- Cool and Serve:
Let the pastries cool slightly before serving. Enjoy warm or at room temperature!
