Instructions:

  1. Activate the Yeast:
    • In a small bowl, combine warm water (not hot) with sugar and yeast. Stir gently and let sit for 5-10 minutes until it becomes frothy.
  2. Mix the Dough:
    • In a large mixing bowl, combine flour, salt, and mixed seeds. Add the yeast mixture and olive oil.
    • Mix until a sticky dough forms.
  3. Knead the Dough:
    • On a lightly floured surface, knead the dough for 8-10 minutes until it’s smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.
  4. First Rise:
    • Place the dough in a greased bowl, cover it with a clean towel or plastic wrap, and let it rise for 1-2 hours in a warm place, or until it doubles in size.
  5. Shape the Dough:
    • Punch the dough down gently to release air. Shape it into a loaf or rolls and place it on a baking tray or in a loaf pan.
  6. Second Rise:
    • Cover again and let rise for 30-45 minutes until puffy.
  7. Bake:
    • Preheat your oven to 375°F (190°C). Bake for 25-30 minutes (for a loaf) or 15-20 minutes (for rolls), until the top is golden brown and the bread sounds hollow when tapped.
  8. Cool:
    • Let the bread cool completely on a wire rack before slicing.
