Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
  2. Mix the Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, salt, pepper, and garlic powder.
  3. Add the Mix-Ins:
    • Stir in the shredded cheese, bacon bits, and chopped herbs, reserving a small amount of each for topping.
  4. Prepare the Wet Ingredients:
    • In a separate bowl, beat the eggs, milk, and oil (or melted butter) until well combined.
  5. Combine:
    • Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix).
  6. Fill the Muffin Cups:
    • Divide the batter evenly among the muffin cups, filling them about 3/4 full. Sprinkle the reserved cheese, bacon, and herbs on top.
  7. Bake:
    • Bake for 18-22 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
