Ingredients:

2 ripe bananas (mashed)

1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour)

1/3 cup brown sugar (or honey)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon (optional)

1/3 cup vegetable oil (or melted butter)

1/2 cup milk (dairy or plant-based)

1 large egg

1 teaspoon vanilla extract

Optional Add-ins:

1/2 cup chocolate chips, nuts, or dried fruits.


Instructions:

  1. Preheat and Prepare:

Preheat your oven to 350°F (175°C).

Line a muffin tin with paper liners or grease it lightly.

  1. Mix Dry Ingredients:

In a large bowl, combine the oats, flour, baking powder, baking soda, salt, and cinnamon.

  1. Mix Wet Ingredients:

In another bowl, whisk together the mashed bananas, sugar (or honey), oil, milk, egg, and vanilla extract until smooth.

  1. Combine:

Pour the wet ingredients into the dry ingredients. Mix gently until just combined. If using add-ins like chocolate chips, nuts, or dried fruits, fold them in at this stage.

  1. Fill Muffin Tin:

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

  1. Bake:

Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  1. Cool and Serve:

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
