Ingredients:
- For the Rice Layer:
- 2 cups cooked white rice
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/4 cup milk
- Salt and pepper to taste
- For the Meat Sauce Layer:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 lb (450g) ground beef
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- For the Topping:
- 2 cups shredded mozzarella cheese
Instructions:
- Prepare the Rice Layer:
- In a bowl, mix the cooked rice, Parmesan cheese, eggs, milk, salt, and pepper until combined. Set aside.
- Make the Meat Sauce:
- Heat olive oil in a skillet over medium heat. Sauté the onions until soft.
- Add the garlic and cook for 1 minute.
- Add the ground beef, breaking it up with a spoon, and cook until browned.
- Stir in the diced tomatoes, tomato paste, paprika, oregano, salt, and pepper. Simmer for 10-15 minutes until the sauce thickens.
- Assemble the Casserole:
- Preheat your oven to 375°F (190°C).
- In a greased baking dish, spread half of the rice mixture as the bottom layer.
- Add a layer of the meat sauce.
- Repeat with the remaining rice and meat sauce.
- Add the Cheese:
- Sprinkle the mozzarella cheese evenly over the top.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.
- Serve:
- Let it cool for a few minutes before slicing. Serve warm and enjoy!
