Sweet Mochi Recipe
Ingredients:
- 1 cup glutinous rice flour (also called mochiko)
- 1/4 cup sugar
- 3/4 cup water
- Cornstarch or potato starch (for dusting)
Optional:
- Sweet fillings (e.g., red bean paste, chocolate, or fruit).
Instructions:
- Mix the Ingredients:
- In a microwave-safe bowl, combine the glutinous rice flour and sugar.
- Gradually add the water while stirring until smooth and lump-free.
- Cook the Mochi:
- Microwave Method: Cover the bowl with plastic wrap (leave a small vent for steam). Microwave on high for 1 minute, then stir. Repeat this process in 30-second intervals until the mixture becomes thick, glossy, and slightly translucent (about 2–3 minutes total).
- Steaming Method: Place the bowl in a steamer and steam for 15–20 minutes, stirring halfway through.
- Cool and Dust:
- Lightly dust your work surface and hands with cornstarch.
- Transfer the hot mochi onto the dusted surface. Let it cool slightly, but not completely, to make handling easier.
- Shape the Mochi:
- Roll the mochi into a log and divide it into small, equal pieces.
- Flatten each piece and fill with your desired filling, if using. Pinch the edges together to seal, then roll into a smooth ball or square.
- Serve:
- Serve the mochi immediately, or store them in an airtight container at room temperature for up to a day. Mochi is best enjoyed fresh.
